Ingredients
- 3 8-oz. pkg. cream cheese, softened
- 2 Tbsp. vanilla extract
- 5 eggs
- 1 cup sugar
- Topping:
- 1 cup sour cream
- 1/2 cup sugar
- 1 tsp. vanilla extract
- 24 maraschino cherries
Directions
- In a large mixing bowl, beat eggs, 1 cup of sugar, cream cheese, 2 Tbsp. vanilla for 5 minutes with mixer until smooth. Spoon mixture into paper-lined 24-muffin tin. Bake at 350 degrees for 30 minutes. Remove from oven and let stand for 5 minutes while the cupcakes deflate a bit, allowing room for the topping.
- In a small bowl, mix together sour cream, 1/2 cup sugar, and 1 tsp. vanilla extract. Put about a teaspoon of topping on each cupcake, then top each with a maraschino cherry. Bake for 5 more minutes. Cool and store in refrigerator.
