Fudge-Iced Maple Peanut Butter Drops

Ingredients

  • 1/4 cup butter
  • 1 egg
  • 1/3 cup brown sugar
  • 3/4 cup maple syrup
  • 3/4 cup creamy peanut butter
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 baking powder
  • Icing:
  • 1/4 butter
  • 1/4 cup bakers cocoa
  • 1/4 cup water
  • 1 tsp. vanilla extract
  • 2 cups powdered sugar

Directions

  1. In a large mixing bowl, blend butter, peanut butter and brown sugar, then add maple syrup, egg, and vanilla . Beat well.
  2. Sift together flour, baking soda salt and baking powder; stir into mixture and blend well. Drop by teaspoons on greased or parchment-lined cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Remove and place on rack to cool.
  3. For icing, put butter, cocoa and water in a small microwavable bowl. Cook on medium one minute; stir. Cook one more minute until bubbly but not scorched. Blend in vanilla and powdered sugar. Stir until mixture cools a bit and thickens slightly, but frost cookies while icing is still warm and gooey.
