Split Pea Soup
(from Coker Family’s recipe box)
So comforting on a cold evening.

Ingredients
- 1 bag green dried split peas
- 1 small onion chopped or 1/2 large onion
- 1 clove garlic minced
- 1 to 2 stalks celery small diced
- 1 to 2 potatoes diced into 1 to 1/2 inch chunks
- 1 to 2 carrots dice into small pieces (cut carrot length ways a couple times...then dice)
- Bacon or ham bone or ham hock
- salt & pepper to taste
- water as needed
Directions

Sort and rinse peas.

Place in smaller soup pot. Cover with water.

Add everything else.

Bring to a boil, stirring frequently.

Simmer covered lightly for about 1 hour or until peas are tender. You MUST STIR THIS OFTEN or it will stick and burn. Add additional water if needed…but this is meant to be a thick soup.

TIP: You might want to get a spoonfull and taste to see if peas are done and if it needs more salt.

This will make a meal for me, but hubby likes a ham sandwich on the side.
