Chinese Cole Slaw
(from Coker Family’s recipe box)
Two cooked and cubed chicken breasts can be added for a main dish salad.

Ingredients
- 1 small head cabbage or Napa cabbage, shredded
- 1 package chicken Top Ramen noodles
- 1 small bag slivered almonds
- 3 tablespoons sesame seeds
- 1 bunch chopped green onions

- DRESSING:
- 3/4 olive oil
- 3 tablespoons sugar
- 3 tablespoons cider or wine vinegar
- 1 flavor packet from Top Ramen
Directions

Toast almonds and sesame seeds in a skillet with a little butter, or use Pam in a non-stick pan.

Combine cabbage and green onions.

Combine all dressing ingredients in a jar and shake well.

Pour dressing over cabbage and marinade in refrigerator for a couple hours.

When ready to serve, add sesame seeds, almonds and crunched up Ramen noodles to cabbage.

Toss.
