Arkansas Garden-Style Relish

Ingredients

  • 4 large tomatoes, seeded and chopped
  • 1 16oz. pkg. frozen corn, thawed
  • 1 15oz. can black beans, rinsed and drained
  • 1/2 cup chopped green pepper and red pepper
  • 3 green onions with tops, sliced
  • 2 Tbsp. fresh cilantro, chopped
  • 1 squeeze of fresh lemon juice
  • 1 cup Tuscan Italian salad dressing

Directions

  1. Combine all ingredients in a large bowl for serving.
  2. Top with chopped avocado or spice it up with cayenne pepper. Refrigerate at least 20 minutes before serving to allow the different flavors to blend together.
