Ingredients
- 2 medium eggplants
- 1/2 cup flour, all purpose
- 1 small egg yolk
- Peanut oil for deep frying
- Sesame Dipping Sauce:
- 1 cup mayonnaise
- 1 1/2 Tbsp. sesame oil
- 1 Tbsp. whole grain Dijon mustard
- 1 Tbsp. seasoned rice wine vinegar
- 1/2 cup chopped green onions
Directions
- Cut eggplants into slices, sprinkle with salt and place in a colander. Set aside for 30 minutes. Meanwhile, to make the sesame mayonnaise, combine all the ingredients in a bowl and mix. Set aside.
- Rinse eggplant and thoroughly dry with paper towel. Combine flour, egg yolk, and 4 oz. of water in a bowl (do not over-mix, lumps are fine). Season with salt. Heat oil in a deep-frying pan over high heat. Dip eggplant in batter, then add to hot oil in batches. Fry for 1-2 minutes or until lightly golden. Serve with sesame dipping sauce.
