Ingredients
- 6 medium yellow squash thinly sliced
- 1/2 cup green onion thinly sliced
- 1/2 cup celery sliced
- 1 cucumber sliced
- 1/2 cup cauliflower pieces (I omit.)
- 2 tablespoons red wine vinegar
- 3/4 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup salad oil
- 2/3 cup cider vinegar
- 1 clove garlic crushed
Directions

Any combination of summer or other fresh raw vegetables will work. My family prefers the yellow squash, green onion, celery, cucumber, red bell pepper and/or green bell pepper…we leave out the cauliflower.

Combine rest of ingredients. Stir well, spoon over vegetables.

Chill about 12 hours, stirring occasionally.

Serve with a slotted spoon.
