Rice Pilaf
(from Coker Family’s recipe box)
Very good served with fish, seafood, chicken or pork.
This serves 4 people. Amounts can be increased for more servings.

Ingredients
- 2 cups water
- 2 chicken bullion cubes
- 1/2 cup frozen peas or peas & carrots
- 1 jar sliced mushrooms, drained
- 1 tablespoon fresh chopped parsley
- 2 tablespoons margarine
- 2 cups minute rice
Directions

Place water, bullion cubes, peas, mushrooms, parsley and margarine in pan.

Bring to boil, covered. Simmer 5 minutes.

Return to boil and stir in rice. Return to boil, turn off heat, keeping lid on.

Allow to sit on stove top covered for 5 to 8 minutes. Fluff and serve.
