Pickled Mushrooms

Ingredients

  • 1 lb. fresh whole small mushrooms
  • 2/3 cup cider vinegar
  • 1/2 cup water
  • 1 Tbsp. finely chopped onion
  • 2 tsp. pickling salt
  • 1/2 tsp. dried parsley flakes
  • 1/2 tsp. celery seeds
  • 2 bay ;eaves
  • 12 peppercorns

Directions

  1. Clean mushrooms and trim stem ends. Place in glass mixing bowl , set aside.
  2. Combine remaining ingredients in 4 cups glass measure.
  3. Microwave for 4 to 5 minutes, on high or until boiling. Pour over mushrooms, cool and refrigerate at least 24 hours before serving. Mushrooms will keep up to one week in refrigerator.
