Southwestern Pie

Ingredients

  • 1 1/2 cups frozen corn (thawed)
  • 8 green onions, sliced
  • 1 (15 oz.) can pinto beans, rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup baking mix such as Bisquick
  • 1/2 cup whole milk
  • 1/2 cup chunky salsa
  • 2 eggs
  • Salsa for garnish

Directions

  1. Heat oven to 400 degrees.
  2. Coat a 9-inch pie plate with cooking spay. Layer corn, onions and beans in pie plate. Sprinkle with cheese.
  3. In a small bowl, stir together baking mix, milk, 1/2 cup salsa and the eggs until blended. Pour Cool 5 minutes. pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Slice into wedges and garnish with extra salsa.
