Preserve the Harvest Diced Tomatoes

Can use imperfect tomatoes but avoid overripe or mushy. Can peel or not. To peel drop in boiling water for a few minutes after making small X in bottom. Skins slide right off. Dice and proceed

Ingredients

  • tomatoes to fill your crock

Directions

  1. Rinse tomatoes. Take whole tomatoes and put in crock one at a time until they peek over rim. This is how many tomatoes you can cook in your slow cooker. Remove tomatoes to prep for cooking.

  2. Peeled or not, dice the tomatoes. Be sure to remove stem and any bruised or mushy parts. Put prepared tomatoes and juice in slow cooker.

  3. Cook on low for 6-8 hours or on high about 3 hours.

  4. When freezing 1 1/2 cups = about size of 1can of tomatoes. If using plastic bags push out air and seal. make sure bag dry on outside or they will stick together.
