Lentil Rice Casserole -orginal

Leftovers can be made into burritos or pitas.
Serve with a lettuce or fruit salad.

Ingredients
- 3/4 C uncooked lentils, green or red or mix it up, also black
- 1/2 C uncooked long-grain brown rice
- 1/4 C instant minced onion OR 1 sm chopped onion
- 3 C water w/ 1T Sue's "Kitchen Magic" or use chicken or vegetable broth
- 1/2 tsp basil leaves
- 1/4 tsp oregano leaves
- 1/4 tsp thyme leaves
- 1/4 tsp garlic powder
- 1/2 C grated Mozzarella or Italian cheeses
- garnish of fresh parsley
Directions

Blend together in a prepared (spray) casserole dish all the ingredients except the cheese.

ke covered for 2-2.5 hours @ 300 degrees F.

During last 20 minutes of baking, top with the grated cheese. *This is optional.

Just before serving, stir to blend in the melted cheese. Garnish with Parsley if desired.
