Cucumber-Carrot Salad

Ingredients

  • 1 large seedless cucumber, julienned
  • 1 carrot, peeled and julienned
  • 1 small handful cilantro leaves
  • 1/2 tsp. salt
  • 1 Tbsp. sugar OR equivalent sugar substitute
  • 1/4 cup rice wine vinegar

Directions

  1. Toss the cucumber, carrot and cilantro in a medium bowl.
  2. In a separate bowl, whisk together the salt, sugar and vinegar until salt and sugar dissolve. Pour mixture over vegetables and toss to combine.
