Cucumber-Carrot Salad

Ingredients
- 1 large seedless cucumber, julienned
- 1 carrot, peeled and julienned
- 1 small handful cilantro leaves
- 1/2 tsp. salt
- 1 Tbsp. sugar OR equivalent sugar substitute
- 1/4 cup rice wine vinegar
Directions
- Toss the cucumber, carrot and cilantro in a medium bowl.
- In a separate bowl, whisk together the salt, sugar and vinegar until salt and sugar dissolve. Pour mixture over vegetables and toss to combine.
