Carrot Salad with Ginger

Use as a dip for pita bread!

Ingredients
- 1 pound carrots, peeled and cut into 2-inch lengths
- 2 tbsp olive oil
- 2 tsp white balsamic vinegar
- 1 tsp honey
- 1/4 tsp ground ginger
Directions

Place carrots in a saucepan with enough water to cover.

Bring to a boil and simmer for 20-25 minutes, until carrots are tender.

Drain well and place carrots in a small mixing bowl; mash coarsely.

Add remaining ingredients.
