Chicken with Lemon, Artichokes and Parsley

Ingredients
- 2 tbsp butter
- 3 skinless, boneless chicken breasts
- salt and pepper
- 1 14-ounce can artichoke hearts (packed in water), drained and quartered
- 3/4 cup chopped, loosely packed Italian parsley
- 1/2 lemon, juiced
Directions

Melt butter in a large saucepan over medium heat.

Pound chicken breasts so they are no more than one-inch thick; season with salt and pepper and add to pan.

Cover with lid and cook for 5 minutes.

Flip chicken, add artichoke hearts and cover again to cook for another 3 minutes.

Add parsley and lemon juice.

Cook uncovered for a minute more and serve.
