Chicken with Lemon, Artichokes and Parsley

Ingredients

  • 2 tbsp butter
  • 3 skinless, boneless chicken breasts
  • salt and pepper
  • 1 14-ounce can artichoke hearts (packed in water), drained and quartered
  • 3/4 cup chopped, loosely packed Italian parsley
  • 1/2 lemon, juiced

Directions

  1. Melt butter in a large saucepan over medium heat.

  2. Pound chicken breasts so they are no more than one-inch thick; season with salt and pepper and add to pan.

  3. Cover with lid and cook for 5 minutes.

  4. Flip chicken, add artichoke hearts and cover again to cook for another 3 minutes.

  5. Add parsley and lemon juice.

  6. Cook uncovered for a minute more and serve.
