Rare beef and radish rolls

Ingredients
- 400g red radishes
- 3 spring onions
- 12 thin slices rare roast beef
- 1 tsp sesame seeds
- 4 tbsp dark soy sauce
- 1 tbsp sesame oil
- 1 garlic clove, crushed
- pinch of caster sugar
Directions

Make the dipping sauce. Mix the soy sauce, oil, garlic and sugar in a small bowl, then set aside.

Finely grate the radishes and squeeze out the excess moisture with your hands. Finely chop the white part of the spring onions and mix with the radishes. Season to taste.

Lay out the beef slices, top each with a line of the radish mixture (about 1 tbsp), then roll up tightly. Place on a serving platter.

Thinly slice the reserved spring onion tops and sprinkle over the beef rolls. Scatter with the sesame seeds, and serve with the dipping sauce.
