Jalqapeno Relish

Ingredients

  • 4 oz. dried apricots
  • 3/4 cup diced white onion
  • 1 to 2 jalapeno peppers, stemmed, seeded and minced
  • 1 Serrano chile, stemmed, seeded and minced
  • 1/4 tsp. minced habanero chile, optional
  • 1 Tbsp. minced fresh ginger
  • 1 1/2 tsp. lemon juice
  • 3/4 tsp. dry mustard
  • 1 1/2 tsp. apple cider vinegar
  • 1/2 tsp. salt

Directions

  1. Combine all ingredients in a medium bowl and mix well. Cove and refrigerate at least 1 hour (preferably overnight).
  2. makes about 1/4 cup
