Lemon-Mustard Viniagrette

Ingredients
- 1 small shallot, minced
- 1 Tbsp. white wine vinegar
- 1 Tbsp. freshly squeezed lemon juice
- 2 tsp. Dijon-style mustard
- Salt
- 3 to 4 Tbsp. extra-virgin olive oil
- Ground black pepper
Directions
- In a small bowl, whisk together the shallot, vinegar, lemon juice and mustard.
- Season with salt and let stand for 20 minutes. Whisk in the oil. Season with black pepper. Adjust seasoning if desired. Use immediately.
