Ingredients
- 2 6 inch whole wheat pita breads
- 2 cloves of garlic
- 1/8 teaspoon salt
- 2 tablespoons fresh lemon juice
- 2 tablespoons ground cumin
- 3 tablespoons extra - virgin olive oil
- 2 cups cooked, drained pinto beans
- 1 cup sliced tomato
- 1/2 cup diced cucumber
- 1 cup sliced romaine lettuce
- 1 cup crumbled feta
- 3 tablespoons parsley
- 3 tablespoons mint
Directions

Preheat oven to 400 degrees.

Spread pita pieces out on large baking sheet.

Bake until crisp.

Let cool.

Mesh garlic and salt together to form a paste.

Transfer to a bowl.

Add lemon juice and cumin.

Whisk together to blend.

Add oil in slowly; whisking continuously.

Place beans, tomatoes, and cucumbers in serving bowl.

Add the toasted pita, lettuce, feta, parsley, mint to bowl.

Pour dressing over top.

Toss to mix.
