Contemporary Tuna Casserole

Ingredients

  • 2 cups fusilli pasta (8 oz.)
  • 16 oz. reduced- fat Alfredo sauce
  • 1/3 cup unsalted chicken broth or white wine
  • 1 tsp. Italian seasoning
  • 1 tsp. lemon zest
  • 2 ( 5 oz.) cans albacore tuna in water, drained
  • 1 ( 9oz.) pkg. frozen sugar snap peas, thawed and drained
  • 1 (4.5 oz.) jar whole mushrooms, drained
  • 1/4 cup unseasoned panko crumbs
  • 1 Tbsp. butter, melted

Directions

  1. Heat oven to 375 degrees. Cook pasta according to package directions; drain.
  2. In a large bowl, combine Alfredo sauce broth or wine, Italian seasoning, lemon zest, tuna, peas, mushrooms and pasta. Spoon into a 7 by 11 inch baking dish coated with cooking spray
  3. In a small bowl, stir together panko crumbs and butter; sprinkle over mixture.
  4. Bake 25 to 30 minutes or until casserole is bubbly and top is golden.
