Ingredients
- 1/2 cup olive oil
- 3/4 cup orange juice
- 2 tsp. fresh thyme, chopped
- 2 tsp. fresh chives, chopped
- 6-7 vegetables cut in equal-sized portions
- salt and pepper to taste
Directions
- In a large bowl, mix together olive oil, orange juice, thyme, chives, salt and pepper. Add vegetables and toss lightly to coat. Cover with plastic wrap and marinate at room temperature for 30 minutes. Allow excess marinade to drip off. Grill over medium heat, 6 to 10 minutes, turning occasionally until vegetables are tender, yet crisp. Serve warm.
