Ingredients
- 1 lb. boneless skinless chicken breast
- 6 cups of fresh vegetables (such as mushrooms, yellow squash, onion, cherry tomatoes, peppers)
- 1 Tbsp. extra-virgin olive oil
- 1 cup barbeque sauce
Directions
- Heat grill to medium heat. Thread chicken onto skewers alternately with vegetables, drizzle meat with olive oil. Grill 10 to 15 minutes, or until chicken is done; turning after 8 minutes and brushing with 1/2 cup barbeque sauce during the last 5 minutes. Garnish with fresh basil and serve with remaining barbeque sauce.
