Sparkler Cookies

as a short cut, you can make these out of refrigerated sugar cookie dough.

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1 cup sugar
  • 1 egg, at room temperature
  • 3/4 tsp. almond or vanilla extract
  • 2 1/2 cups all-purpose flour
  • Colored sugars

Directions

  1. Cream butter and sugar together. Add egg and extract and mix until well combined. Stir in flour, mixing until fully incorporated. Divide dough in half.
  2. Cover cutting board with plastic wrap and press out half of dough into an 8-inch square. Sprinkle sugars onto the dough in alternating patches of blue and red. Use the plastic wrap to lift and roll the dough into a log. Repeat with second half and refrigerate dough logs for 1 to 2 hours or until firm.
  3. Preheat oven to 375 degrees Line baking sheet with parchment paper.
  4. Remove plastic wrap from dough and cut into 1/4 inch slices. Place slices about 2 inches apart on baking sheet. Bake 6 to 8 minutes, until edges just turn golden. Let cool 1 to 2 minutes on the pan, then remove to a wire rack to cool completely.
