Ingredients
- 3 cups fresh pineapple chunks
- 2 cups fresh cranberries
- 1/4 cup honey
- 1/4 cup slivered almonds, toasted
- 1 Tbsp. grated orange rind
Directions
- Place pineapple and cranberries into a food processor and secure lid. Pulse 8 to 10 times until coarsely chopped. Pour into a 2- quart saucepan and add honey. Mix well. Bring to a boil over medium heat, stirring occasionally. Reduce heat to medium-low and simmer 15 to 20 minutes, stirring often to prevent sticking, until thickened. Remove from heat and stir in almonds and orange rind. Pour into storage container and cool to room temperature. Cover and chill until needed.
