Quick Corn Relish

Ingredients

  • 2 cans (12 oz.) whole kernel corn, drained
  • 3 Tbsp. finely chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped tomato
  • 1 jar (4 oz.) pimientos, drained and chopped
  • 1 cup diced celery
  • 1/2 cup bottled Italian salad dressing

Directions

  1. Combine all ingredients, toss lightly. Cover and chill until ready to serve.
  2. Can be prepared 2 days in advance and refrigerated until needed. This is a versatile relish and can be served with salads, sandwiches, cold and hot meats.
