Pineapple Mint Relish

Ingredients

  • 1 cup diced fresh or drained canned pineapple
  • 1 cup diced cucumber
  • 2 Tbsp. minced fresh or 2 tsp. dry mint
  • 2 Tbsp. cider vinegar
  • 1 Tbsp. honey
  • Salt

Directions

  1. n m In a small bowl, stir together pineapple, cucumber, mint, vinegar, honey, and salt to taste. Serve or if made ahead, cover and chill up to 4 hours.
