Easy Condensed Milk Biscuits, with variations

Makes a really big batch of yummy biscuits.
A great ‘basic’ recipe, to which you can add extras such as:
Chocolate chips
Chocolate chunks and chopped macadamia nuts
Press ‘hole’ in centre of dough ball before baking, add jam of choice to fill hole
M & M’s for the children
Crystallised ginger or dried appricots, chopped
And the list goes on, use your imagination!

Serves 70 people

Ingredients

  • 500 gr butter, softened slightly (but not too soft)
  • 1 C sugar
  • 1 x 397 gr can sweetened condensed milk
  • 5 C self raising flour
  • Optional ingredients of your choice - see comments above

Directions

  1. Beat butter and sugar until creamy.

  2. Add condensed milk, and beat to combine.

  3. Add self raising flour, incorporating until flour is combined.

  4. Mix in your choice of optional ingredients, or bake plain if preferred.

  5. As an example, add 1 packet of chocolate chips, or 1 cup of diced ginger or dried apricots – how much you add is your preference.

  6. Roll or scoop into walnut sized balls, place on paper lined oven tray, and press lightly with tines of a fork.

  7. Bake at 180oC approximately 12 minutes, until firm and golden.

  8. Cool on tray for a minute or two before transferring to wire rack to cool completely.
