Sausage Gumbo

Ingredients
- 2 tsp. canola oil
- 2 chopped green bell peppers
- 1 medium chopped onion
- 1 1/2 cups water
- 1 cup long-grain rice
- 1 tsp. dried thyme
- 1 tsp. coarse salt
- 1 (10 oz.) pkg. frozen chopped kale, thawed
- 1 (10 oz.) pkg. frozen cut okra, thawed
- 1 (14 1/2 oz.) can chopped undrained stewed tomatoes
- 7 -8 oz. kielbasa, sliced and halved
Directions
- Heat oil in a large skillet on medium-high. Add bell peppers and onion and cook 5 minutes or until lightly browned. Stir in water,

rice, thyme and salt. Bring to a boil, reduce heat to low and simmer 10 minutes.
- Stir in kale, okra, tomatoes and sausage. Return to simmer, cover and cook 10 more minutes or until rice is tender. Ladle into bowls and serve.
