Sausage Gumbo

Serves 6 people

Ingredients

  • 2 tsp. canola oil
  • 2 chopped green bell peppers
  • 1 medium chopped onion
  • 1 1/2 cups water
  • 1 cup long-grain rice
  • 1 tsp. dried thyme
  • 1 tsp. coarse salt
  • 1 (10 oz.) pkg. frozen chopped kale, thawed
  • 1 (10 oz.) pkg. frozen cut okra, thawed
  • 1 (14 1/2 oz.) can chopped undrained stewed tomatoes
  • 7 -8 oz. kielbasa, sliced and halved

Directions

  1. Heat oil in a large skillet on medium-high. Add bell peppers and onion and cook 5 minutes or until lightly browned. Stir in water,
  2. rice, thyme and salt. Bring to a boil, reduce heat to low and simmer 10 minutes.

  3. Stir in kale, okra, tomatoes and sausage. Return to simmer, cover and cook 10 more minutes or until rice is tender. Ladle into bowls and serve.
