Fig Cookies

Ingredients

  • 1 cup dried figs, chopped fine
  • 1/2 cup water
  • 2 cups sifted flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 tsp. vanilla
  • pecan halves

Directions

  1. Preheat oven to 375 degrees.
  2. IN a saucepan over medium heat, bring figs and water to a boil. (OR use fresh figs, omitting water, and heating as directed. If necessary, add just a few drops of water to prevent scorching). Reduce heat and simmer for about 5 minutes until thickened, stirring frequently; remove from heat and allow to cool.
  3. Sift flour with baking powder and salt. In another mixing bowl, cream shortening, sugar, brown sugar and egg together. Add vanilla and continue beating until creamy.; Gradually add flour mixture, then fig mixture; blend well.
  4. Drop rounded tablespoons onto a greased baking sheet about 1 inch apart. Press pecan half in center. Bake 12-15 minutes until lightly brown.
