Ingredients
- 1 cup dried figs, chopped fine
- 1/2 cup water
- 2 cups sifted flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 cup shortening
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 tsp. vanilla
- pecan halves
Directions
- Preheat oven to 375 degrees.
- IN a saucepan over medium heat, bring figs and water to a boil. (OR use fresh figs, omitting water, and heating as directed. If necessary, add just a few drops of water to prevent scorching). Reduce heat and simmer for about 5 minutes until thickened, stirring frequently; remove from heat and allow to cool.
- Sift flour with baking powder and salt. In another mixing bowl, cream shortening, sugar, brown sugar and egg together. Add vanilla and continue beating until creamy.; Gradually add flour mixture, then fig mixture; blend well.
- Drop rounded tablespoons onto a greased baking sheet about 1 inch apart. Press pecan half in center. Bake 12-15 minutes until lightly brown.
