Quick Corn Relish

Serves 6 people

Ingredients

  • 1/3 cup sugar
  • 1 tsp. each flour and dry mustard
  • 1/2 tsp. salt
  • 1/4 tsp. turmeric
  • 1 cup vinegar
  • 1 can (12 oz.) whole-kernel corn, drained
  • 1 cup coarsely chopped cabbage
  • 1/2 cup each coarsely chopped onion and green pepper
  • 1 small tomato, seeds removed, chopped

Directions

  1. In medium saucepan, mix sugar, flour, mustard, salt and turmeric. Stir in vinegar; bring to boil.
  2. Add vegetables; stirring, return to boil. Reduce heat and simmer uncovered 15 minutes. Chill.
  3. Serve as a side dish.
