Ingredients
- 2 Tbsp. butter
- 3/4 cup plus 2 Tbsp. sifted flour
- 4 egg yolks
- 1/2 cup sugar
- 4 egg whites, beaten until stiff
- Pinch of salt
- 1 tsp. vanilla
- Powdered sugar for dusting
Directions
- Preheat oven to 350 degrees. Grease and flour 2 baking sheets with 2 Tbsp. butter and 2 Tbsp. flour. Mark parallel lines in flour across width of tray about 4 inches apart. Put eggs and sugar in large mixing bowl, and with electric mixer using wire whisk attachment, beat on medium-high speed until mixture is pale yellow, thick and tripled in volume, about 8 minutes.
- Add egg whites , remaining 3/4 cup flour, salt and vanilla, fold to mix thoroughly so mixture is smooth.
- Fill a large pastry bag with 3/4 inch plain tip with the mixture. Pipe fingers about 4 1/2 inches in length on the baking sheet, using lines as a guide.
- Dust lady fingers with powdered sugar. Bake for 15 to 18 minutes, until just firm on the outside and soft in center.
