Mustard Relish Molds

Serves 6 peopleCategories: relish- salsa- chutney
Ingredients
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 2 1/4 tsp. dry mustard
- 3/4 tsp. salt
- 1 tsp. MSG
- 1 cup cider vinegar
- 3 eggs, slightly beaten
- 3/8 tsp. Sweeta (liquid sweetener)
- 1/2 cup finely diced celery
- 1/2 cup grated raw carrot
- 1/2 cup finely diced green pepper
Directions
- Sprinkle gelatin on cold water. Combine mustard, salt,, MSG, vinegar and eggs in saucepan. Stir over low heat until thickened (do not boil). Add gelatin; stir until dissolved. Stir in Sweeta. Chill until syrupy. Fold in celery, carrot and green pepper. Spoon into 6 small individual molds. Chill until set. Unmold. Serve with cold meats as a relish.
