Tomato and Watermelon Salad

Serves 6 people

Ingredients

  • 3 cups tomatoes, cut into 1-inch cubes or wedged
  • 3 cups watermelon. cut into 1-inch cubes
  • 1/4 tsp. salt
  • 2 slices cooked bacon, crumbled (optional)
  • 2 oz. soft goat cheese, or crumbled blue or feta cheese

Directions

  1. Gently mix tomatoes and watermelon in a medium bowl. Add salt. Plate individually or in a serving bowl, then sprinkle with bacon, if desired, and cheese.
