Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup cornmeal (fine)
- 1 Tbsp. granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup milk
- 2 eggs
- 1 Chiquita® banana, chopped
- 3/4 cup thawed corn kernels
- Oil, for frying
- Barbecue sauce, for dipping
Directions

Stir together flour, cornmeal, sugar, baking powder and salt. In separate bowl, whisk milk with eggs; whisk in flour mixture until well combined and smooth. Stir in banana and corn.

Heat enough oil to come ½ inch up side in 12-inch skillet over medium heat; drop scant tablespoonfuls of batter into oil. Cook, in batches, for 2 to 3 minutes per side or until golden; drain on paper towel. Serve with barbecue sauce
