Ingredients
- 1 gallon sliced cucumbers
- 3 quarts vinegar
- 6 cups sugar
- 3 Tbsp. salt
- 1/2 box pickling spice
- 1/2 cup slaked lime (calcium hydroxide)
Directions
- Slice the cucumbers and soak 24 hours in lime water (1/2 cup lime to 1 gallon of water).

At the end of the 24 hours, drain and wash the cucumbers. Cover them with cold water and let stand for 2 hours. Mix vinegar, sugar, and pickling spice, then add cucumber slices. Simmer gently for 3 1/2 hours. Then pack into hot jars, seal and process in boiling water for 5 minutes. Remove, cool and store.
