mango- Apricot Chutney

Ingredients

  • 1/2 cup chopped mango
  • 1 cup diced Golden Delicious apples
  • 1 cup diced onions
  • 1 cup diced dried apricots
  • 3/4 cup red wine vinegar
  • 1/2 cup brown sugar
  • 1/4 cup chicken stock
  • 1 Tbsp. minced ginger
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. ground cinnamon

Directions

  1. Combine all ingredients in a heavy saucepan and bring to a boil. Reduce heat and simmer, uncovered, 1 hour, stirring frequently. Remove from heat. Let cool. Refrigerate in an airtight container. Serve at room temperature with pork tenderloin, poultry or ham.
