Ingredients
- 1 lb. fresh mushrooms or 2 cans (6 to 8 oz. each) sliced mushrooms
- 1/2 cup olive oil or salad oil
- 1 large clove garlic, peeled
- 1/4 cup wine vinegar
- 1 tsp. oregano ;eaves
- 1 tsp. salt
- 1/4 Tbsp. pimiento
Directions
- Rinse, pat dry and slice fresh mushrooms ( makes about five cups) or drain canned mushrooms; set aside.
- In a medium saucepan, heat oil. Add garlic and sauté until lightly browned. Remove garlic and discard. Add mushrooms to hot oil, stirring briefly for 2 minutes.
- Remove from heat. Stir in vinegar, oregano, salt and black pepper; toss gently. Turn into serving bowl or jar. Add pimiento. Cover and marinate at room temperature for one hour. Chill and serve as a relish.
