I’ve got rid of the corn starch in the marinade – doesn’t add anything to the flavour and just makes it hard to cook the meat [sticks to the wok]

Ingredients

  • beef - thinly sliced flank
  • fish sauce
  • sugar
  • salt
  • pepper
  • onion
  • nuoc cham
  • vermicelli
  • lettuce
  • cucumber
  • roasted peanuts
  • bean sprouts
  • pickled grated carrot [or plain]

Directions

  1. marinate beef in fish sauce sugar salt pepper corn starch mixed with water

  2. saute sliced onion and add beef

  3. soak vermicelli in hot water for 20-30 mins

  4. put ingredients in bowls

  5. serve with nuoc cham separate
