Mixed Vegetable Relish

Ingredients

  • 2 cups shredded cabbage
  • 2 cups sliced celery
  • 2 green tomatoes, seeded and chopped (about 2 cups)
  • 1 cucumber, thinly sliced
  • 1 red pepper, seeded and chopped
  • 1 green pepper, seeded and chopped
  • 1 medium- size onion, thinly sliced
  • 2 cups cooked lima beans
  • 2 cups cooked cauliflower flowerets
  • 2 cups cooked green beans
  • 1 cup sliced carrots, cooked until tender
  • 3 cups cider vinegar
  • 2 cups water
  • 1 cup sugar
  • 2 Tbsp. mustard seed
  • 1 Tbsp. celery seed
  • 1 Tbsp. salt

Directions

  1. Combine cabbage, celery, tomatoes, cucumber, red pepper, green pepper and onion in a large kettle. Cover with salt water (1/4 cup salt per quart of water); let stand 12 hours or overnight. Drain.
  2. Combine with remaining ingredients. Bring to boiling; boil 10 minutes. Pack into sterilized jars. Seal.
