Ingredients
- 2 cups shredded cabbage
- 2 cups sliced celery
- 2 green tomatoes, seeded and chopped (about 2 cups)
- 1 cucumber, thinly sliced
- 1 red pepper, seeded and chopped
- 1 green pepper, seeded and chopped
- 1 medium- size onion, thinly sliced
- 2 cups cooked lima beans
- 2 cups cooked cauliflower flowerets
- 2 cups cooked green beans
- 1 cup sliced carrots, cooked until tender
- 3 cups cider vinegar
- 2 cups water
- 1 cup sugar
- 2 Tbsp. mustard seed
- 1 Tbsp. celery seed
- 1 Tbsp. salt
Directions
- Combine cabbage, celery, tomatoes, cucumber, red pepper, green pepper and onion in a large kettle. Cover with salt water (1/4 cup salt per quart of water); let stand 12 hours or overnight. Drain.
- Combine with remaining ingredients. Bring to boiling; boil 10 minutes. Pack into sterilized jars. Seal.
