Peach or Pear Chutney

Ingredients

  • 4 quarts finely chopped, peeled peaches or pears
  • 1 cup seedless raisins
  • 1 cup chopped onions
  • 2- 3 cups brown sugar
  • 2 Tbsp. ginger
  • 2 tsp. or pinch salt
  • 1 clove minced garlic (optional)
  • 1 whole hot red pepper
  • 5 cups vinegar

Directions

  1. Combine all and bring to a boil. Reduce heat and simmer 40 minutes. Stir a lot to keep from sticking. Remove whole hot pepper. Pour, boiling hot, into hot jars; leaving 2/4 inch headspace. Adjust hot lids. Process 10 minutes in boiling water bath.
  2. Serve as garnish for beef.
