Ingredients
- 4 quarts finely chopped, peeled peaches or pears
- 1 cup seedless raisins
- 1 cup chopped onions
- 2- 3 cups brown sugar
- 2 Tbsp. ginger
- 2 tsp. or pinch salt
- 1 clove minced garlic (optional)
- 1 whole hot red pepper
- 5 cups vinegar
Directions
- Combine all and bring to a boil. Reduce heat and simmer 40 minutes. Stir a lot to keep from sticking. Remove whole hot pepper. Pour, boiling hot, into hot jars; leaving 2/4 inch headspace. Adjust hot lids. Process 10 minutes in boiling water bath.
- Serve as garnish for beef.
