Pomodoro Salad

Ingredients

  • 4 ripe medium tomatoes
  • 1 tsp. coarse salt
  • 1 small red onion, sliced thinly, lengthwise
  • 1/4 cup chopped flat leaf parsley
  • 2 cloves garlic, minced
  • 2 Tbsp. torn fresh basil leaves
  • 1/2 tsp. fresh thyme or oregano ( or 1/2 tsp. dried)
  • 3 Tbsp. extra-virgin olive oil

Directions

  1. Bring a small pot of water to boil, submerge each tomato for 10 seconds, then immediately run under cold water. Remove skin. Cut out core, slice into thin wedges and place in medium bowl. Add salt and mix. Add onion, thyme, or oregano and oil. Stir until well combined. hill 30 minutes and serve.
