Rice Pudding with Raisins (microwave method)

Ingredients
- 2 1/2 cups milk
- 3 eggs, slightly beaten
- 1/2 cup sugar
- 1 Tbsp. cornstarch
- 1 tsp. vanilla
- 3/4 tsp. salt
- 1/2 tsp. nutmeg
- 1 1/2 cups cooked rice
- 1/2 cup raisins
Directions
- Combine all ingredients in a large mixing bowl; stir well. Pour into eight 6 oz. custard cups, filling each 3/4 full
- Microwave for 24 to 28 minutes, on low, or until almost set in center. If necessary, remove individual cups as they finish cooking and continue microwaving others until also set. Let stand 5 minutes before serving.
