Ingredients
- 6 egg yolk, beaten
- 1 cup sugar
- 1/4 cup cornstarch
- 1/4 cup cold milk
- 24 macaroons, cut into small pieces
- 6 egg whites, stiffly beaten
- 1/4 cup rum
Directions
- Combine egg yolks, sugar, cornstarch and cold milk in top part of a double boiler. Mix until well blended and smooth. Add scalded milk; mix well. Cook over boiling water, stirring constantly, until thickened. Cover. Continue cooking over hot, not boiling, water for 20 minutes longer.
- Place macaroons in bottom of a large serving bowl. Cover with egg whites. Pour hot custard over all. Let stand until cool. Sprinkle with rum. Chill for 3 hours or until set.
