Classic Caesar dressing

Ingredients
- 1 fat garlic clove
- 1 anchovy fillet
- 1 egg yolk
- 1/4 tsp Dijon mustard
- 1 tbsp lemon juice
- 100ml mild olive oil
- 2 tbsp Parmesan, grated
- 1/2 tbsp double cream
Directions

Crush the garlic clove under the blade of a large knife. Rub it around the inside of a bowl, then discard. Mash the anchovy on a board with the blade of a knife and add to the bowl. Add the egg yolk, mustard and lemon juice. Whisk until smooth. Slowly whisk in the olive oil, until creamy. Stir in the Parmesan, cream and some pepper.
