Avocado dip

Ingredients

  • 2 ripe avocados, peeled, halved and stone removed
  • juice of 1/2 lemon
  • 1 garlic clove, crushed
  • 1 ripe tomato, deseeded and chopped
  • 1/4 cucumber, chopped
  • handful fresh coriander, chopped
  • crisps and carrot sticks, to serve

Directions

  1. Using a fork, mash the avocado in a bowl with the lemon juice and garlic, until still quite chunky. Stir in the tomato, cucumber and coriander, then season to taste.

  2. Transfer to a bowl and serve with the crisps and carrot sticks.
