Ingredients
- 8 oz. dried apricots
- 2 cups sugar
- Grated rind and juice of 2 lemons
- 1 can (13 1/2 oz.) crushed pineapple
Directions
- Cut apricots in small pieces with kitchen shears. Put in saucepan with 1 1/2 cups water. Bring slowly to boil, cover and simmer 10 minutes. Add remaining ingredients, bring again to boil and simmer, uncovered, stirring occasionally, 30 to 40 minutes or until thick. Pour into hot sterilized jars and seal.
