Crockpot Cornish Hens

Ingredients
- 1 large or 2 small cooking apples, cored and cut in eighths
- 1 Tbsp. soy sauce
- 2 to 4 Cornish hens
- 1 cup dry white or blush wine, or sauterne
- 3 Tbsp. orange marmalade, or 1 whole 3 orange, sliced thin (do not peel)
- 1/2 lemon; juice and rind
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 3 Tbsp. lemon juice
- 2 cloves garlic, crushed and minced
- 1 Tbsp. honey
- 1 onion, sliced
- 1/4 tsp. thyme minced
Directions
- Dip apple pieces in soy sauce and place into cavity of birds, dividing evenly between them. If desired, use pins or kitchen twine to close cavity, or just leave it as is.
- Into the remaining so sauce, add wine, marmalade( if using), lemon rind and juice and salt and pepper ( may want to add a little more salt and pepper as it seemed to need it when I made this). Stir, and brush over birds.
- Place breast side down in a 5 -6 quart slow cooker, pour remaining sauce over all. Cover and cook on low 7 hours or on high for about 3-4 hours. Baste occasionally after first 2 to 4 hours. Serve with rice, or mashed potatoes.
