Very Strawberry Ice Cream

Ingredients

  • 2 (3 oz.) pkg. strawberry-flavored gelatin
  • 2 cups boiling water
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 (13 oz.) can evaporated milk
  • 6 cups milk
  • 1 tsp. vanilla extract
  • 1 quart strawberries, mashed

Directions

  1. Dissolve gelatin in boiling water; cool slightly. Set aside.
  2. Beat eggs with electric mixer at medium speed until frothy. Gradually add sugar, beating until thick. Add gelatin mixture, milk and vanilla; mix well. Stir in strawberries.
  3. Pour mixture into freezer can of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer’s directions. Let ripen at least 1 hour.
  4. makes about 1 gallon
