Peach Cobbler

Ingredients
- Peach Filing:
- 5 c fresh sliced peaches or 2-1 lb., 4oz can, drain and reserved juice
- 1/4 c juice
- 1/2 c sugar
- 2 tbsp. flour
- 1 tbsp. lemon juice
- 1/2 tsp. vanilla
- 1/4 tsp. almond extract
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 2 tbsp. butter
- Batter:
- 1/2 c flour
- 1/2 c sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 tbsp. butter
- 1 egg (slightly beaten)

Peach Mixture:

Combine all ingredients, except the butter and place in 8X8 dish/pan. Then dot with the butter.

Batter:

Combine all ingredients until smooth. Drop 9 portion over filling spacing evenly.

Bake at 375 fro 35-40 minutes or until peaches are tender and crust is golden.
